All purpose flour / Maida:1 cup

Kalathappam

Ingredients
Rice:1 1/2 cup
Jaggery : 3 blocks
Black cumin seed:1/4 tsp  
Sesame seed:1/4 Oil for frying
Baking soda : 1 pinch
Ghee:1 tsp
Coconut Oil:1 tsp
Small Onion:5,chopped
Water:As needed
Preparation Method
1.Soak rice in water for at least 5-6 hours.
2.Grind soaked rice to make a smooth batter.
3.Heat jaggery by adding little water and keep stirring until it dissolves completely and filter it.
4.Add filtered jaggery into the batter.
5.Add baking soda,black cumin seeds and sesame seeds to the batter and mix well.
6.Heat a pan pour ghee and coconut oil,add small onions and saute for few seconds.
7.Pour the batter into the pan,cover and cook in low flame for about 15 minutes.

Prawn Fry


Ingredients
Prawns : 1/2 kg
Oil  :for frying                             
Ginger garlic paste : 1/2 ts
Turmeric powder:1/2ts
Red chilly powder :1 1/2 ts
Coriander powder : 1/2 tbsp 
Salt to taste 
Garlic:3 pods
Curry   leaves:1 spring
Preparation Method 
1.In a cooking pan mix prawns along with all powders,ginger garlic paste and salt by adding little water.
2.Allow it to cook for at least 8 minutes and remove from fire.
3.Heat oil in a pan ,add the cooked prawns into it.
4.While frying sprinkle curry leaves and chopped garlic.
5.Fry till the prawns become golden brown color.

Cauliflower Masala

Ingredients
Cauliflower florets:1 cup
Small Onion:4,chopped
Garlic:4,Crushed
Turmeric powder:1/2 tsp
Chilly Powder:1/2 tsp

Oil: 2 tsp

Preparation Method
1.Heat oil in pan,add small onions and garlic,saute for few seconds.
2.Add cleaned cauliflower florets along with little salt,green chilli and add  powders.
3.Add very little water,cover the pan and allow it to cook for around 10-15 minutes.
4.Garnish with Coriander Leaves.

Coconut Chutney

Ingredients
Grated coconut: 1/2 cup
Green chillies: 2 nos
Coriander leaves: few
Ginger: a small piece

Mustard seeds: 1/2 tsp

Asafoetida: a pinch(Optional)

Preparation Method
1.Grind grated coconut with green chillies,ginger and coriander leaves by adding required water.
2.Heat Oil in a pan and splutter mustard seeds.
3.Add red chilli, asafoetida and curry leaves.
4.Pour grinded mix into the pan ,add salt accordingly.
5.Let it to boil once and remove from fire.

Mango Pickle

Ingredients
Unripe mango:1 Kg
Red chilly powder:4 tbsp
Mustard seed:1 tsp
Fenugreek seed:1 tsp
Turmeric:1 tsp
Ginger:A small piece
Curry leaves:1 spring
Salt to taste
Sesame oil:1/4 cup
Asafoetida:1/4 tsp
Preparation Method
1.Finely chop the mangoes.
2.Heat oil in a kadai, add the mustard and fenugreek and wait till mustard finishes popping.
3.Add curry leaves,crushed ginger and saute for a minute.
4.Add chopped mango with turmeric,red chilli powder and enough salt.
5.Add the asafoetida too.
6.Stir continuously and let it cook in low heat till the oil oozes.

Coconut Ada(Ilayada)

Ingredients
Rice Flour:1 cup
Water: 1 cup
Oil: 1 tsp
Salt as required
Grated coconut - 2 cups
Jaggery grated - 1/2 cup
Banana Leaves - as required
Preparation Method
1.Mix Jaggery and grated coconut well.
2.Boil water. When it starts boiling, add the rice flour and mix well with out lumps.
3.Make small balls with this dough.
4.Spread the dough on the banana leaves. Place the coconut Jaggery mixture inside and fold once, gently fold the sides.
5.Cook in steam.(or on a heat pan).

Asafoetida: A pinch
Cumin seeds:A pinch
Fennel seeds :A pinch
Ground pepper:A pinch
Oil : 3 tbsp
Water:As needed

Preparation Method
1.Pressure cook Dal and once done add all vegetables along with onion,tomato ,garlic pods,turmeric powder,green chillies and salt
2.Cook up to 3 whistles.(Add enough water so as to cover the vegetables)
3.Remove the lid and add tamarind extract, Stir and simmer on low flame for some more time .
4.Add Red chilli powder,coriander powder and asafoetida powder and simmer for 2 more minutes.
5.Add sambar powder and mix well. Then add  coriander leaves.
6.In pan put a pinch of cumin seeds,ground pepper and fennel seeds ,saute for 2 minutes and grind it ,add this to the curry. 
7.Heat oil in a pan and allow mustard seeds to splutter.
8.Add chopped shallots, red chillies and curry leaves and fry for a minute.
9.Pour this to the sambar.

Green Gram(Cherupayar) Curry


Ingredients
Green Gram(Cherupayar):1/2 cup
Onion:1 small,sliced

Preparation Method
1.Soak green gram in water for at least 5-6 hours.
2.In a pan fry grated coconut with small onion,Red chilli and curry leaves until golden brown color.Grind it by adding little water.
3.Pressure cook gram along with tomatoes,onion,green chilli,ginger garlic paste,salt and all powders.
4.Add  coconut paste and bring to boil,add curry leaves.
5.Heat oil in pan and add small onions,saute till it turns to brown color.
6.Pour this to the curry. 

Neyyappam

Ingredients
Rice (Pachari):2 cup
Jaggery: 3/4 cup
Black cumin seed:1/4 tsp  
Sesame seed: 1/4 tsp
Oil for frying
Baking soda : 1 pinch(optional)
salt :A pinch
Water:As needed

Puttu

Ingredients
Rice Powder:2 cups
Cooked Rice:1/2 cup
Grated Coconut: 1/2 cup
Salt : As required
Water:As required
Preparation Method
1.Grind cooked rice by adding little salt and water.
2.Pour this little by little to the rice powder and start mixing it so as to make the powder wet.
3.Keep on  adding and continue mixing, till u can make lumps when you clasp but which can be easily crumbled.
4.Fill the pressure cooker with water, not more than half its capacity and close the lid.(Remove the weight)
5.Place 2 tsp grated coconut in the Puttukutty (special utensil) and then add two handful of rice mixture , again add 2 tsp of grated coconut.Continue adding rice mixture and fill the top with some coconut.
6.Close the lid and place the Puttukutti on cooker and steam the Puttu for about 10-12 minutes.
 

Fish Curry (Coconut Added)

Fish :500 gm
Red Chili Powder: 2 tbsp
Turmeric Powder:1/2 tsp
Coriander Powder:2 tbsp
Fenugreek Powder: 1/2 tsp

Aniseed(Perumjeerakam):1/4 tsp

1.Clean the fish and cut into pieces. Marinate with little salt and turmeric powder,Keep Aside.

Mustard seeds:1/4 tsp
Urad dal:1/4 tsp
Red chilli:3
Garlic:4 cloves
Onion::1 ,sliced
Turmeric powder:1/4 tsp

Salt to taste

1.Cook rice by adding little salt.Drain and keep aside.
2.Heat oil in pan,Splutter mustard seeds and urad dal.
3.Add redchilli,garlic and curry leaves.

1.Boil eggs,remove outer skin and cut half.
2.Heat a pan,pour 2 tsp of oil and add onion,saute until it turns to brown color.
3.Add green chilli, ginger-garlic paste and saute.
4.Add turmeric powder,Red chilli powder,coriander powder and salt,saute until the raw smell disappears.
5.Finally add egg halves and mix well.
6.Garnish with coriander leaves.

1.Heat oil in a a pan,splutter mustard seeds and add curry leaves.
2.Add the sliced cabbage,green chillies along with little salt.
3.Saute and cook till done.

Banana Bonda(Unda Pori)

Small Banana:6
Maida:3 tsp
Sugar:2 tsp
Grated coconut:2 tsp(optional)

Preparation Method
1.Peel banana and mash well with hands.
2.Add  maida,sugar and grated coconut ,mix well and make a thick batter.
3.Heat oil in pan, take small portions from the batter and put it in the oil.
4.Deep fry until golden brown color.
5.Serve hot.

Cheera (Spinach) Curry

Ingredients
For Chicken Masala
Chicken  : 1/4 kg

Preparation Method
1.Make a paste of grated coconut,garlic,green chilli and cumin seeds.

3.Once it is cooked add yogurt,mix well,never let it to boil.

Rice flour: 11/2 cups + 2 tbsp
Water: 1 1/2 cup

Preparation Method
1.In a saucepan, boil the water, sprinkle salt to the boiling water.
2.When the water boils, add the rice flour and combine it without lumps.
3.Remove from the heat and combine well till incorporated.
4.Once cool knead well to make a smooth dough.(If the dough is not soft sprinkle some warm water or oil while kneading ).

Coconut Pathiri(Ila pathiri)


Ingredients
Rice Flour : 1 cup
Water :1 1/4 cup
Salt as required
Grated coconut :1  cups
Banana Leaves - as required(Optional)

Preparation Method
1.Take the flour in a steel bowl.
2.Heat Water in a sauce pan by adding salt.When it starts boiling, add to the rice flour and mix well with back of a steel ladle.
2.Once cool add grated coconut ,combine well (Knead With hands)and make a dough.(Add more water if needed.It should be hot)

Oil : 1 tbsp
Curry leaves : 1 sprig
Water: 1/2 cup
Preparation Method
1.Soak the horse gram for 6-7 hours.
2.Remove the outer skin of the banana stem and cut it into very small pieces. While cutting remove the fiber as much a possible.
2.Pressure cook the unnithandu along with horse gram,green chilli, salt wiith enough water.(Up to 2 whistles)
3.Heat oil in a Pan, add chopped small onions,garlic when it turns to brown add red chillies and curry leaves.
4.Pour this to the cooker,Stop fire.
